Traditional Ajarian new year’s table is unimaginable without Zirabaji (labaskhmuli) dish.

Preparation of Zirabaji is a tradition in each Ajarian family, it is a very time-consuming process, and usually preparation begins 2 days before New Year’s Eve.

The origin of Zirabaji is related to the following story: Head of the family starts preparing the dish and the rest of the family members should take part in this process.  Zirabhaji in New Year's Eve in Adjara is done as a sign of a happy and wealthy year.
